I could definitely use this in my future classroom by creating quick instructional videos for working out math problems, where the problems are annotated with step-by-step instructions. I love the feature where you can grab the text from an image. Perhaps, students could take pictures of their work, grab the text, and submit them that way so that I am not having to decipher through bad handwriting 24/7.
I love that it is a good collaboration tool and can be integrated with Google Docs. I could see myself assigning projects using Google Keep, where each group can collaborate with the live updated note sharing feature. Additionally, they can draw pictures and diagrams (or graphs using the grid feature), add annotated pictures of their work, and add date and time reminders to get things done and stay on track with the group. Additionally, I love how Google Keep can b used with simply wifi and a computer - one does not need an iPad to be successful using this.
